Description
This delicious combination is courtesy of Mittagundi and makes a fabulous all day snack.
Instructions
Cook oats, coconut, wheatgerm, sesame seeds, sunflower seeds and pepitas in a frying pan in a small amount of olive oil for 8-10 minutes. Transfer to a bowl and set aside to cool. Stir in sultanas. Soften butter and honey in a small saucepan over medium heat, stirring for 3-4 minutes. Bring to the boil and then reduce heat to a low simmer without stiring for 7 minutes or until mixture forms a soft ball when a little is dropped into ice cold water. Add to dry ingredients and stir until combined. Spoon mixture into a slice tray and press down using a metal spoon. Allow to cool and cut into squares or rectangles. Store in a foil-lined airtight container for up to 7 days.
Notes
This recipe can be made in larger quantities and frozen. Try adding some grated carrot or apple for a different flavour.
